Ingredients

  • 8 ounces semi-sweet chocolate, chopped
  • 4 tablespoons unsalted butter
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the chocolate and butter together in a double boiler or in the microwave in short bursts until smooth.
  2. In a bowl, beat the egg yolks and sugar together until pale and thick, then mix in the melted chocolate.
  3. In another bowl, whip the cream with vanilla until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
  4. In a clean bowl, whip the egg whites until stiff peaks form and fold them into the chocolate mixture.
  5. Spoon the mousse into cups and refrigerate for at least 2 hours before serving.

Notes

  • For a richer flavor, use dark chocolate instead of semi-sweet.
