  • 2 cups uncooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups chicken broth
  • 1 pound boneless chicken thighs
  • 1 cup tzatziki sauce
  • 1 cup diced cucumber
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the rice, garlic powder, onion powder, and chicken broth.
  3. Lay the chicken thighs on top and season with salt and pepper.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Remove the foil, add the tzatziki sauce and cucumber, and bake for another 15 minutes uncovered.
  6. Fluff the rice with a fork before serving.

  • For added flavor, marinate the chicken in tzatziki sauce prior to cooking.
