A delightful and creamy broccoli cheddar soup that’s easy to make for everyone.

Ingredients

  • 4 cups broccoli florets
  • 1 cup diced onion
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the broccoli florets and cook for a few minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 10 minutes.
  5. Add the heavy cream and garlic powder, and mix well.
  6. Remove from heat and use an immersion blender to puree the soup to your desired consistency.
  7. Stir in the shredded cheddar cheese until melted and smooth.
  8. Season with salt and pepper before serving.
