A quick and comforting lasagna soup recipe featuring turkey bacon.

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add ground turkey, onion, and garlic. Cook until browned.
  3. Add crushed tomatoes, chicken broth, and seasonings. Bring to a simmer.
  4. Break lasagna noodles into pieces and add to the pot. Cook until tender.
  5. Stir in ricotta and half the mozzarella. Serve topped with remaining mozzarella and chopped turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Feel free to add vegetables like spinach or zucchini.
