- 8 ounces lasagna noodles
- 4 slices turkey bacon
- 1 pound ground turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the same pot, add ground turkey, onion, and garlic. Cook until browned.
- Add crushed tomatoes, chicken broth, and seasonings. Bring to a simmer.
- Break lasagna noodles into pieces and add to the pot. Cook until tender.
- Stir in ricotta and half the mozzarella. Serve topped with remaining mozzarella and chopped turkey bacon.
Notes
- For a vegetarian version, omit the turkey bacon and use vegetable broth.
- Feel free to add vegetables like spinach or zucchini.
