A delightful take on the traditional Spanakopita, this flaky spiral is easy to make and bursting with flavor.

Ingredients

  • 1 pound spinach
  • 1 cup feta cheese
  • 1 cup ricotta cheese
  • 2 eggs
  • 1 tablespoon fresh dill
  • 1 teaspoon salt
  • 1 package phyllo dough
  • 1/2 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix spinach, feta cheese, ricotta, eggs, dill, and salt.
  3. Lay a sheet of phyllo dough on a clean surface and brush with melted butter.
  4. Add another layer of phyllo dough and brush again with butter.
  5. Spoon the spinach mixture along one edge of the dough and roll it up tightly.
  6. Shape the rolled dough into a spiral and place it on a baking sheet.
  7. Brush the top with more melted butter.
  8. Bake for 30-35 minutes until golden brown.

Notes

  • For extra flavor, consider adding nutmeg to the filling.
  • Serve warm with a side of tzatziki for dipping.
