  • 2 cups rolled oats
  • 2 ripe bananas
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/2 cup grated apple
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a blender, combine the rolled oats, bananas, baking powder, cinnamon, and salt. Blend until smooth.
  3. Add the applesauce, maple syrup, grated apple, and vanilla extract. Blend until well combined.
  4. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes until the muffins are set and a toothpick comes out clean.
  6. Let them cool for a few minutes before transferring to a wire rack to cool completely.
