This Fluffy Pancake Delight features perfectly light pancakes served with crispy turkey bacon and a variety of sweet toppings.

Ingredients

  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 4 slices turkey bacon
  • maple syrup to taste
  • fresh fruit for topping

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Meanwhile, cook the turkey bacon in a separate skillet until crispy.
  7. Serve pancakes warm topped with turkey bacon, maple syrup, and fresh fruit.
