1 pound orzo pasta
2 cups cooked chicken, shredded
1 large onion, sliced
4 slices turkey bacon, chopped
3 cups beef broth
1 cup shredded cheese (Swiss or Gruyere recommended)
2 tablespoons olive oil
2 teaspoons garlic powder
1 teaspoon thyme
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat and sauté onions until caramelized.
Add chopped turkey bacon to the skillet and cook until crispy.
In a large mixing bowl, combine cooked orzo, shredded chicken, caramelized onions, turkey bacon, broth, garlic powder, thyme, salt, and pepper.
Transfer the mixture to a casserole dish and sprinkle cheese on top.
Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
Let sit for 5 minutes before serving.
Notes
For added flavor, consider adding a splash of Worcestershire sauce.
You can substitute chicken with leftover rotisserie chicken for an easier prep.
