  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season the beef roast with salt and pepper.
  2. In a large pot, heat olive oil over medium-high heat and brown the roast on all sides.
  3. Remove the roast and add onions and garlic to the pot, cooking until softened.
  4. Return the roast to the pot, add beef broth, red wine, thyme, and Worcestershire sauce.
  5. Cover and roast in the oven at 300°F for 3-4 hours, or until tender.
  6. Remove the roast and let it rest before slicing. Serve with the onion gravy.
