A warm and hearty garlicky cabbage soup that brings comfort and flavor with turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 head of cabbage, chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy, then remove and set aside.
  3. In the same pot, add onions and garlic, sauté until fragrant.
  4. Add chopped cabbage and cook until wilted.
  5. Pour in vegetable broth and water, then season with salt, pepper, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Serve hot, garnished with crumbled turkey bacon.
