This Gluten-Free Cream of Mushroom Soup is a warm and comforting dish made with turkey bacon, perfect for chilly days!

  • 4 cups fresh mushrooms, sliced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 slices turkey bacon, diced
  • 4 cups gluten-free chicken broth
  • 2 cups gluten-free heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic; sauté until translucent.
  3. Add the sliced mushrooms and cook until softened.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the heavy cream and thyme, then return the turkey bacon to the pot.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 10 minutes, stirring occasionally.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
