Ingredients

  • 2 medium zucchinis
  • 1 cup feta cheese, crumbled
  • 1 can chickpeas, drained and rinsed
  • 2 large whole wheat wraps
  • 1 cup plain yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your grill to medium heat.
  2. Slice the zucchinis lengthwise and brush with olive oil, then season with salt and pepper.
  3. Grill the zucchini for about 4-5 minutes on each side until tender and slightly charred.
  4. While the zucchini is grilling, mix the yogurt, dill, and garlic in a bowl to make the herbed yogurt sauce.
  5. Once the zucchini has finished grilling, assemble the wrap by layering the grilled zucchini, chickpeas, and feta cheese on the whole wheat wrap.
  6. Drizzle with the herbed yogurt sauce, roll up the wrap, and slice it in half.
  7. Serve immediately and enjoy!

Notes

  • For extra flavor, marinate the zucchini in the olive oil, garlic, and herbs before grilling.
