Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 1 rotisserie chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 1 cup egg noodles (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery, cooking until softened.
  3. Stir in garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add shredded chicken, thyme, rosemary, bay leaf, salt, and pepper.
  6. Let it simmer for about 20 minutes.
  7. If using, add egg noodles and cook until tender.
  8. Remove bay leaf before serving.

Notes

  • For added flavor, you can use fresh herbs instead of dried.
  • Add mixed vegetables for more nutrition.
