Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup egg noodles (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken breasts and cook until browned on both sides. Remove and set aside.
  3. Add the onion, carrots, and celery to the pot and sauté until softened.
  4. Add the garlic and cook for another minute.
  5. Pour in the chicken broth and add the thyme and oregano.
  6. Return the chicken to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.
  7. Remove the chicken, shred it, and return it to the pot. If using, add the egg noodles and cook until tender.
  8. Season with salt and pepper, and stir in the fresh parsley before serving.
