- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup egg noodles (optional)
- 2 tablespoons fresh parsley, chopped
- In a large pot, heat the olive oil over medium heat.
- Add the chicken breasts and cook until browned on both sides. Remove and set aside.
- Add the onion, carrots, and celery to the pot and sauté until softened.
- Add the garlic and cook for another minute.
- Pour in the chicken broth and add the thyme and oregano.
- Return the chicken to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.
- Remove the chicken, shred it, and return it to the pot. If using, add the egg noodles and cook until tender.
- Season with salt and pepper, and stir in the fresh parsley before serving.
