  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained
  • 1 cup corn, frozen or canned
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 2 tortillas, cut into strips

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Add onion, garlic, and bell pepper; sauté until softened.
  4. Stir in diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, and paprika; bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Stir in lime juice and cilantro just before serving.
  7. Top with tortilla strips for garnish.
