A delicious and moist zucchini bread recipe that is both healthy and easy to make.

Ingredients

  • 2 cups grated zucchini
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the grated zucchini, honey, eggs, applesauce, and vanilla.
  3. In another bowl, combine the whole wheat flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool before slicing.

Notes

  • For added flavor, consider adding nuts or chocolate chips.
