- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- 1 cup chocolate ganache
- 1 cup dark cherries, pitted
- ¼ cup cherry juice
- Preheat oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In a separate bowl, beat cream cheese with sugar and vanilla until smooth.
- Whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Spread half of the mixture over the crust, then layer with chocolate ganache and cherries.
- Add the remaining cream cheese mixture on top and refrigerate for at least 4 hours.
- Serve chilled, drizzled with cherry juice.
Notes
- Let the cheesecake sit at room temperature for about 10 minutes before slicing.
- Top with extra cherries for decoration.
