Ingredients

  • 1 onion

  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil

Instructions

  1. Peel and chop the parsnips, onion, and garlic.
  2. In a pot, heat olive oil and sauté onions until translucent.
  3. Add garlic and spices, cooking until fragrant.
  4. Add parsnips and broth, bring to a boil, then simmer until parsnips are tender.
