  • 4 slices Irish bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, diced
  • 1/2 head green cabbage, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings.
  2. Add onions and garlic to the pot and sauté until softened.
  3. Pour in the chicken broth and add the diced potatoes. Bring to a boil.
  4. Once boiling, reduce heat and add the cabbage, pepper, and salt.
  5. Simmer for 20 minutes, or until the potatoes are tender.
