- 1 pound Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 bag (9 ounces) refrigerated cheese tortellini
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the onion and garlic, cooking until the onion is translucent.
- Stir in the chicken broth and diced tomatoes.
- Bring to a boil and then add the tortellini and spinach.
