A comforting soup filled with Italian sausage and tortellini.

Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 bag (9 ounces) refrigerated cheese tortellini
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the onion and garlic, cooking until the onion is translucent.
  3. Stir in the chicken broth and diced tomatoes.
  4. Bring to a boil and then add the tortellini and spinach.
  5. Add Italian seasoning, salt, and pepper; simmer for about 5-7 minutes until the tortellini are cooked.

Notes

  • For a thicker soup, reduce the amount of broth.
  • Feel free to add more vegetables if desired.
