A deliciously easy breakfast idea featuring a jammy egg paired with creamy avocado and fresh pesto.

Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 slices bread of your choice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a pot of water to a boil and gently add the eggs. Boil for 6-7 minutes for jammy eggs.
  2. Remove eggs and place them in an ice bath to cool.
  3. Toast the bread slices until golden brown.
  4. Slice the avocado and spread it on the toasted bread.
  5. Peel and halve the boiled eggs, placing them on top of the avocado.
  6. Drizzle with pesto, then season with salt and pepper.

Notes

  • For a variation, add cherry tomatoes or a sprinkle of chili flakes for heat.
