This Jammy Egg, Avocado & Pesto Toast is the ultimate breakfast treat that combines rich flavors and creamy textures.

Ingredients

  • 2 ripe avocados
  • 4 eggs
  • 4 slices of your favorite bread
  • 1/4 cup pesto
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil and gently add the eggs. Boil for 6-7 minutes for jammy eggs.
  2. Remove the eggs and place them in an ice bath to cool.
  3. Toast the bread until golden brown.
  4. While the bread is toasting, mash the avocados in a bowl and season with salt and pepper.
  5. Spread the mashed avocado on the toasted bread.
  6. Peel and slice the jammy eggs and place them on top of the avocado.
  7. Add a dollop of pesto on top of the eggs and serve immediately.
