- 2 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1 cup fresh spinach, chopped
- 1/2 cup canned artichoke hearts, drained and chopped
- 1/4 cup ricotta cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Preheat your oven to 400°F (200°C).
- In a bowl, mix almond flour, baking powder, and salt.
- Add eggs and mozzarella cheese to the dry ingredients and mix until dough forms.
- Split the dough into two equal parts and roll each out on parchment paper.
- In a separate bowl, mix spinach, artichoke hearts, ricotta cheese, garlic powder, and Italian seasoning.
- Spread the filling on one side of each rolled-out dough, then fold and seal the edges.
- Bake calzones for 20-25 minutes until golden brown.
- Let cool for a few minutes before serving.
