  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup canned artichoke hearts, drained and chopped
  • 1/4 cup ricotta cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix almond flour, baking powder, and salt.
  3. Add eggs and mozzarella cheese to the dry ingredients and mix until dough forms.
  4. Split the dough into two equal parts and roll each out on parchment paper.
  5. In a separate bowl, mix spinach, artichoke hearts, ricotta cheese, garlic powder, and Italian seasoning.
  6. Spread the filling on one side of each rolled-out dough, then fold and seal the edges.
  7. Bake calzones for 20-25 minutes until golden brown.
  8. Let cool for a few minutes before serving.

Notes

  • For a crispier calzone, brush the top with olive oil before baking.
