  • 1/4 cup erythritol
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples (sugar-free)
  • 1/4 cup sugar-free caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, erythritol, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the diced apples and half of the caramel sauce.
  6. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Drizzle the remaining caramel sauce over the warm scones before serving.
