Delicious Kolaczki are traditional Polish cookies filled with sweet fruit filling, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fruit preserves (apricot or raspberry)

Instructions

  1. In a large bowl, mix together flour, butter, and cream cheese until a dough forms.
  2. Chill the dough for at least 1 hour.
  3. Roll out the dough and cut into squares.
  4. Place a small amount of fruit preserves in the center of each square.
  5. Fold the corners of the square to the center and pinch to seal.
  6. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until lightly golden.
  7. Let cool and dust with powdered sugar before serving.

Notes

  • For a twist, try using different fruit fillings such as cherry or blueberry.
  • Make sure the dough is well chilled for easier handling.
