2 cups grated zucchini
1 cup granulated sugar
1/2 cup melted butter
2 large eggs
1 teaspoon vanilla extract
1/4 cup fresh lemon juice
1 teaspoon lemon zest
2 cups all-purpose flour

1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large mixing bowl, combine grated zucchini, sugar, melted butter, eggs, vanilla extract, lemon juice, and lemon zest. Mix until well combined.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
