A deliciously fresh dessert treat that combines the zest of lemon with the moisture of zucchini.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the shredded zucchini, sugar, melted butter, eggs, and vanilla. Mix well.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Stir in the lemon zest and lemon juice.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before serving.
