- 1 pound chicken thighs
- 1 cup rice
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh dill, chopped
- Juice of 2 lemons
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sauté until translucent.
- Add the chicken thighs to the pot and sear on both sides.
- Pour in the chicken broth and water, then bring to a boil.
- Add the rice, salt, and pepper. Reduce heat to low and cover. Cook for 20 minutes.
- Remove chicken, shred, and return to pot along with dill and lemon juice. Stir well.
- Serve hot, garnished with additional dill if desired.

- For a creamier soup, add a splash of cream before serving.
