A delicious and comforting lemony Greek chicken and rice soup, perfectly flavored with dill.

Ingredients

  • 1 pound chicken thighs
  • 1 cup rice
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh dill, chopped
  • Juice of 2 lemons

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sauté until translucent.
  2. Add the chicken thighs to the pot and sear on both sides.
  3. Pour in the chicken broth and water, then bring to a boil.
  4. Add the rice, salt, and pepper. Reduce heat to low and cover. Cook for 20 minutes.
  5. Remove chicken, shred, and return to pot along with dill and lemon juice. Stir well.
  6. Serve hot, garnished with additional dill if desired.

Notes

  • For a creamier soup, add a splash of cream before serving.
