  • 6 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally until charred and cooked through.
  3. While the corn is grilling, cook the turkey bacon in a skillet over medium heat until crispy. Let it cool and then crumble it.
  4. Once the corn has cooled, cut the kernels off the cob and add them to a large mixing bowl.
  5. Add the cherry tomatoes, red onion, cilantro, crumbled bacon, and feta cheese to the bowl.
  6. In a small bowl, mix the mayonnaise, lime juice, chili powder, salt, and pepper.
  7. Pour the dressing over the salad and toss everything together until well coated.
  8. Serve immediately or refrigerate for an hour before serving to meld the flavors.
