Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 can cannellini beans, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 cups chopped spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the vegetable broth, diced tomatoes, and cannellini beans.
  4. Add the dried basil, oregano, red pepper flakes, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. In the last 5 minutes of cooking, stir in the spinach and Parmesan cheese.

Notes

  • This soup is great for meal prep and can be made ahead of time.
  • Add a splash of cream for a richer texture.
