- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 can cannellini beans, drained and rinsed
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 cups chopped spinach
- 1/2 cup grated Parmesan cheese
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Stir in the vegetable broth, diced tomatoes, and cannellini beans.
- Add the dried basil, oregano, red pepper flakes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- In the last 5 minutes of cooking, stir in the spinach and Parmesan cheese.
