A delicious and moist pumpkin bread topped with a crunchy streusel and drizzled with sweet maple glaze.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 can (15 oz) pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the oils and sugars, then add eggs and mix till smooth.
  4. Stir in the pumpkin and vanilla until combined.
  5. Gradually add the dry ingredients to the wet mixture and fold gently.
  6. Fold in the walnuts.
  7. Pour the batter into the prepared loaf pan and sprinkle with streusel.
  8. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  9. Let cool before drizzling with maple glaze.

Notes

  • For an extra touch, consider adding chocolate chips or dried cranberries to the batter.
