- 2 cups basmati rice
- 1.5 pounds chicken thighs
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon cinnamon
- 4 cups chicken broth
- 1 cup raisins
- 1/2 cup slivered almonds
- 2 cups mixed vegetables (carrots, peas)
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until translucent.
- Stir in the chicken thighs, cumin, coriander, and cinnamon. Cook until the chicken is browned.
- Add the rice, chicken broth, raisins, salt, and pepper. Bring to a boil.
- Reduce the heat, cover, and simmer for about 20 minutes until the rice is cooked.
- Fluff the rice and stir in the mixed vegetables and slivered almonds. Serve hot.
