  • 2 cups basmati rice
  • 1.5 pounds chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon cinnamon
  • 4 cups chicken broth
  • 1 cup raisins
  • 1/2 cup slivered almonds
  • 2 cups mixed vegetables (carrots, peas)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Stir in the chicken thighs, cumin, coriander, and cinnamon. Cook until the chicken is browned.
  3. Add the rice, chicken broth, raisins, salt, and pepper. Bring to a boil.
  4. Reduce the heat, cover, and simmer for about 20 minutes until the rice is cooked.
  5. Fluff the rice and stir in the mixed vegetables and slivered almonds. Serve hot.

Notes

  • For added flavor, marinate the chicken in spices overnight.
