My favorite recipe for delicious birria tacos that are simple to make and packed with flavor.

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon ground coriander
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 bay leaves
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine the beef, cumin, chili powder, coriander, onion, garlic, and broth. Bring to a boil.
  2. Reduce heat and simmer for 2 to 3 hours until beef is tender.
  3. Remove the beef, shred it, and return it to the pot.
  4. Heat a skillet over medium heat and warm the tortillas.
  5. Fill each tortilla with the beef mixture and top with cilantro and lime juice.

Notes

  • Let the birria sit for a while for the flavors to meld.
  • Serve with some broth on the side for dipping.
