- 2 pounds beef chuck roast
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon ground coriander
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 bay leaves
- 12 corn tortillas
- 1 cup chopped fresh cilantro
- 1 lime, cut into wedges
- In a large pot, combine the beef, cumin, chili powder, coriander, onion, garlic, and broth. Bring to a boil.
- Reduce heat and simmer for 2 to 3 hours until beef is tender.
- Remove the beef, shred it, and return it to the pot.
- Heat a skillet over medium heat and warm the tortillas.
- Fill each tortilla with the beef mixture and top with cilantro and lime juice.
Notes
- Let the birria sit for a while for the flavors to meld.
- Serve with some broth on the side for dipping.
