  • 1 tablespoon lemon juice
  • 1 envelope unflavored gelatin
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Prepare the pie crust according to package instructions and let it cool.
  2. In a saucepan, combine sugar, cornstarch, and salt. Whisk in water and lemon juice, then cook over medium heat until thickened.
  3. Add sliced peaches and gelatin, stirring until gelatin is dissolved. Allow to cool slightly.
  4. In a separate bowl, whip heavy cream and powdered sugar until soft peaks form.
  5. Fold the whipped cream into the peach mixture until well combined.
  6. Pour the filling into the prepared pie crust and chill in the refrigerator for at least 4 hours before serving.
