- 4 large russet potatoes
- 1/2 cup turkey bacon, chopped
- 1/2 cup chicken ham, diced
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork. Rub them with olive oil and sprinkle with salt.
- Bake the potatoes for about 45-60 minutes until tender.
- Once cooked, let them cool slightly, then cut them in half and scoop out the insides into a bowl.
- Mix the potato insides with turkey bacon, chicken ham, cheddar cheese, sour cream, green onions, salt, and pepper.
- Stuff the mixture back into the potato skins and top with remaining cheese.
- Return to the oven and bake for an additional 15 minutes until cheese is melted and bubbly.
