A delicious recipe for Twice Baked Potatoes with a twist of turkey bacon and chicken ham.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, chopped
  • 1/2 cup chicken ham, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork. Rub them with olive oil and sprinkle with salt.
  3. Bake the potatoes for about 45-60 minutes until tender.
  4. Once cooked, let them cool slightly, then cut them in half and scoop out the insides into a bowl.
  5. Mix the potato insides with turkey bacon, chicken ham, cheddar cheese, sour cream, green onions, salt, and pepper.
  6. Stuff the mixture back into the potato skins and top with remaining cheese.
  7. Return to the oven and bake for an additional 15 minutes until cheese is melted and bubbly.

Notes

  • This recipe can be made ahead of time and stored in the fridge before baking.
