  • 1 cup granulated sugar

  • 1 cup brown sugar
  • ½ cup pineapple juice
  • 2 large eggs

  • ½ teaspoon salt
  • 1 can pineapple slices
  • maraschino cherries for decoration

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, melt butter and brown sugar over medium heat. Pour into the bottom of a cake pan.
  3. Arrange pineapple slices over the sugar mixture and place cherries in the center of each pineapple slice.

  5. In another bowl, beat eggs, vanilla extract, and pineapple juice together.
  6. Mix the wet ingredients into the dry ingredients until just combined.
  7. Pour batter over the pineapple slices in the pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool for 10 minutes before inverting onto a plate.
