A delicious and nutritious take on toast, combining creamy avocado, perfectly poached eggs, and savory turkey bacon on a bed of mashed potatoes.

Ingredients

  • 2 medium potatoes
  • 1 ripe avocado
  • 4 eggs
  • 4 slices turkey bacon
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Boil potatoes until tender, then mash and season with salt and pepper.
  2. In a skillet, cook turkey bacon until crispy.
  3. In a pot, bring water to a simmer and poach eggs to desired doneness.
  4. Slice avocado and season with salt and pepper.
  5. Assemble the toast by layering mashed potatoes, avocado, and poached eggs on top of the turkey bacon.
