A comforting and creamy potato soup made with turkey bacon, perfect for chilly days.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped fresh chives

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, and sauté until translucent.
  3. Add diced potatoes and chicken broth, and bring to a boil. Reduce heat and simmer until potatoes are tender.
  4. Puree the soup with an immersion blender until desired consistency is reached.
  5. Stir in heavy cream, season with salt and pepper, and heat through.
  6. Serve topped with crispy turkey bacon and chives.

Notes

  • This soup can be customized with your favorite herbs and spices.
  • For a lighter version, use half-and-half instead of heavy cream.
