  • 1 cup turkey bacon, diced
  • 1 cup chicken ham, chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp; remove and set aside.
  2. Add onions and garlic to the pot and sauté until translucent.
  3. Add diced potatoes, chicken ham, thyme, and chicken broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Puree the soup until smooth, then stir in heavy cream; heat through.
  6. Season with salt and pepper to taste, and serve topped with crispy bacon.

Notes

  • For a thicker soup, blend more thoroughly.
  • Make it vegetarian by omitting bacon and using vegetable broth.
