- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups pumpkin puree
- 1 cup cream cheese, softened
- 1 cup granulated sugar
- ¾ cup brown sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ½ teaspoon salt
- 1 cup all-purpose flour
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared baking dish.
- In another bowl, beat the cream cheese until smooth. Add the pumpkin puree, sugars, eggs, vanilla, and spices. Mix well until combined.
- Pour the pumpkin mixture over the crust and spread evenly.
- In a separate bowl, mix the flour with some melted butter, brown sugar, and oats to make the streusel topping. Sprinkle over the pumpkin layer.
- Bake for 40-45 minutes or until the center is set. Let cool before slicing.
