  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • ¾ cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared baking dish.
  3. In another bowl, beat the cream cheese until smooth. Add the pumpkin puree, sugars, eggs, vanilla, and spices. Mix well until combined.
  4. Pour the pumpkin mixture over the crust and spread evenly.
  5. In a separate bowl, mix the flour with some melted butter, brown sugar, and oats to make the streusel topping. Sprinkle over the pumpkin layer.
  6. Bake for 40-45 minutes or until the center is set. Let cool before slicing.
