  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, and vegetable oil until smooth.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Use a cookie scoop to portion out the dough and roll into balls, then coat in powdered sugar.
  8. Place on the prepared baking sheet and bake for 10-12 minutes, until the edges are set.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
