Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the cottage cheese, pumpkin puree, eggs, and honey or maple syrup.
  3. In another bowl, mix the oat flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Remove from oven and let cool before serving.
