Pumpkin Swirl Earthquake Cake

A delicious, indulgent dessert that combines the flavors of pumpkin and cream cheese in a rich cake.

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Pour half of the batter into a greased cake pan.
  7. In a separate bowl, mix the softened cream cheese with sugar and spoon it over the batter.
  8. Top with the remaining batter and swirl gently with a knife.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Let cool before serving.

Notes

  • For a touch of extra flavor, sprinkle chopped nuts on top before baking.
