A delicious and unique take on classic potato salad featuring roasted potatoes and turkey bacon.

Ingredients

  • 2 pounds baby potatoes
  • 6 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes and place them on a baking sheet.
  3. Drizzle with olive oil, sprinkle with garlic powder, onion powder, salt, and black pepper. Toss to coat.
  4. Bake for 25-30 minutes until golden and tender.
  5. While potatoes are roasting, cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  6. In a small bowl, whisk together Dijon mustard, apple cider vinegar, and remaining olive oil.
  7. Once potatoes are cooked, combine in a large bowl with chopped bacon and dressing. Toss gently.
  8. Garnish with chopped parsley and serve warm or at room temperature.

Notes

  • For extra flavor, add chopped green onions.
  • This salad can be made a day ahead and stored in the fridge.
