- 2 pounds baby potatoes
- 6 slices turkey bacon
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Black pepper to taste
- 1/4 cup chopped fresh parsley
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes and place them on a baking sheet.
- Drizzle with olive oil, sprinkle with garlic powder, onion powder, salt, and black pepper. Toss to coat.
- Bake for 25-30 minutes until golden and tender.
- While potatoes are roasting, cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
- In a small bowl, whisk together Dijon mustard, apple cider vinegar, and remaining olive oil.
- Once potatoes are cooked, combine in a large bowl with chopped bacon and dressing. Toss gently.
- Garnish with chopped parsley and serve warm or at room temperature.
Notes
- For extra flavor, add chopped green onions.
- This salad can be made a day ahead and stored in the fridge.
