Delicious and easy Salmon Sushi Bake recipe that’s perfect for a cozy night in.

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 pound salmon fillet
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 avocado, sliced
  • 2 green onions, chopped
  • 1 sheet nori, cut into strips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse sushi rice until water runs clear, then combine with water in a rice cooker and cook.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, transfer to a large bowl and mix in the vinegar mixture.
  5. Place cooked rice in a baking dish and spread evenly.
  6. Top with cooked and flaked salmon mixed with mayo and sriracha.
  7. Bake for 15-20 minutes until heated through.
  8. Garnish with avocado slices, green onions, and nori strips before serving.

Notes

  • For a spicier kick, increase the amount of sriracha.
  • Can substitute salmon with cooked crab or shrimp if preferred.
