- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- 1 pound salmon fillet
- 1/2 cup mayonnaise
- 1 tablespoon sriracha sauce
- 1 avocado, sliced
- 2 green onions, chopped
- 1 sheet nori, cut into strips
- Preheat oven to 350°F (175°C).
- Rinse sushi rice until water runs clear, then combine with water in a rice cooker and cook.
- In a bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once rice is cooked, transfer to a large bowl and mix in the vinegar mixture.
- Place cooked rice in a baking dish and spread evenly.
- Top with cooked and flaked salmon mixed with mayo and sriracha.
- Bake for 15-20 minutes until heated through.
- Garnish with avocado slices, green onions, and nori strips before serving.
Notes
- For a spicier kick, increase the amount of sriracha.
- Can substitute salmon with cooked crab or shrimp if preferred.
