  • 4 large baking potatoes
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup frozen peas and carrots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 1 hour or until tender.
  3. In a skillet, cook the turkey bacon until crispy, then chop and set aside.
  4. In the same skillet, sauté the onion and garlic until translucent.
  5. Add ground turkey to the skillet and cook until browned.
  6. Stir in peas, carrots, beef broth, Worcestershire sauce, thyme, salt, and pepper; simmer for 10 minutes.
  7. Once potatoes are done, cut them in half and scoop out some flesh.
  8. Mix the potato flesh with the turkey mixture and spoon it back into the potato skins.
  9. Top with cheese and crispy turkey bacon.
  10. Return to the oven and bake for an additional 15 minutes until cheese is melted.

  • For a creamier texture, add some butter or sour cream to the potato flesh before refilling.
