  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 cup frozen peas
  • 1 cup corn
  • 1 cup diced carrots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the potatoes and pierce them with a fork, then bake for about 45 minutes until tender.
  3. While the potatoes bake, cook the ground beef or lamb until browned, then add the onion and garlic and cook until softened.
  4. Stir in the carrots, peas, corn, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook until heated through.
  5. Once the potatoes are done, scoop out the insides and add them to the meat mixture. Mix well.
  6. Fill the potato skins with the meat mixture, top with cheese, and return to the oven for 10-15 minutes until the cheese is bubbly.
  7. Serve hot with your choice of accompaniments.

  • For a vegetarian option, substitute lentils for the meat.
  • These can be topped with sour cream or chives for extra flavor.
