Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package refrigerated biscuit dough

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add carrots, celery, peas, cream of chicken soup, chicken broth, thyme, salt, and pepper on top of the chicken.
  3. Cover and cook on low for 6-8 hours or until chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. Cut the biscuit dough into pieces and stir into the mixture.
  6. Cook for an additional 30 minutes until dumplings are cooked through.
