  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • 2 teaspoons dried thyme
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, mix chicken broth, heavy cream, lemon juice, thyme, garlic, salt, and pepper.
  3. Pour the cream mixture over the chicken.
  4. Cook on low for 6-7 hours or until chicken is tender.
  5. Once cooked, shred the chicken with two forks and stir in fresh parsley.
