  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons curry powder
  • 1 teaspoon garam masala
  • 1 can (14-ounce) diced tomatoes
  • 1 cup heavy cream
  • 1/4 cup butter
  • 2 tablespoons sugar
  • salt to taste
  • fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions, garlic, and ginger; sauté until onions are translucent.
  2. Add curry powder and garam masala, stirring for one minute until fragrant.
  3. Transfer the mixture to the slow cooker. Add chicken thighs, diced tomatoes, salt, and sugar.
  4. Cook on low for 6-8 hours or high for 4-5 hours.
  5. About 30 minutes before serving, stir in heavy cream and butter.
  6. Garnish with fresh cilantro before serving.
